Baromètre is Marrakech's most celebrated cocktail destination, tucked beneath the Résidence Al Houda on Rue Moulay Ali in Guéliz. Founded in 2016 by the Hadni brothers, it pioneered mixology culture in Morocco with a hidden staircase entrance, dark wood panels, leather banquettes and 1920s speakeasy atmosphere. The bar team crafts cocktails with homemade macerations, infusions and bitters, drawing on hyper-local Moroccan ingredients: Taliouine saffron, argan oil, preserved lemon, and Dadès Valley rose water. A refined Mediterranean-Moroccan sharing-plate menu accompanies the drinks. Named among the MENA region's top ten at the Tales of the Cocktail Spirited Awards 2023, and featured in Vogue, the New York Times and the Louis Vuitton city guide.
