Palais Bab Sahra is a restored Moorish palace-restaurant in the heart of Fès el-Bali, a short walk from the Bab Bou Jeloud (Blue Gate). Its two-storey dining room is built around a Moroccan fountain under vaulted ceilings and zellige tilework, and a rooftop terrace looks out over the ancient medina. The kitchen serves classic Fassi cuisine — pastilla, couscous and slow-cooked tagines — through set menus, and the house also runs hands-on Moroccan cooking classes.
