Dar Roumana is a Franco-Moroccan fine-dining restaurant set inside a restored 19th-century mansion in the Fes el-Bali medina, widely cited among the best tables in Fez. Head chef Younes Idrissi builds a daily-changing fixed-price menu from seasonal produce bought fresh in the medina markets, served to only a handful of tables each night. Diners begin with a drink on the rooftop terrace over the old city before eating beneath original zellij, carved cedar and painted plaster.
