Opened in 2016 by chef Najat Kaanache — a Moroccan chef trained at El Bulli, Noma, Alinea, Per Se and The French Laundry — Nur is a single-sitting fine-dining restaurant in Fes el-Bali, serving an improvised tasting menu of around 10 courses built from the day's market produce.

There is no à la carte. The menu is built each morning from what comes in from the market, then served in around 10 courses over roughly 2.5 hours. Vegetarian, pescatarian and other dietary needs can be accommodated when booked in advance.
