Salut Maroc is a flamboyant boutique riad in the heart of Essaouira's medina, and its rooftop restaurant and bar are open to non-guests. Perched above the old town near the ocean-facing ramparts, the terrace looks out over the Atlantic and serves locally caught fish, wood-grilled meats, big-bowl salads and revisited Moroccan dishes. Live Gnawa and rock bands play most evenings in summer, making it a favourite sunset spot.
