Gastronomic French cuisine in an open-patio palace at Selman Marrakech

Sabo at Selman Marrakech is a gastronomic evening restaurant created by twice Michelin-starred chef Jean-François Piège, set beneath a retractable-roof patio that opens to the Marrakech night sky. Designed by Jacques Garcia in a Moroccan Belle Époque style, the space blends Ginori porcelain, antique silverware, and live musical performances to create a theatrical dining experience. The menu celebrates French culinary tradition using exceptional local Moroccan produce — from Oualidia prawns to sea bass cooked in a wood-fired oven — without becoming either a French transplant or a reinterpreted Moroccan restaurant.
