You can cover the headline monuments — Bou Inania, Qarawiyyin from outside, Chouara Tannery, Nejjarine — in a single full day. Two days is more comfortable and lets you add the Mellah, Borj Nord and the Marinid Tombs.

Where should I have lunch on a Fez medina walking day?

The Ruined Garden (mid-medina, garden setting) or Café Clock (rooftop on Talaa Kebira) both work mid-route. Both are 10–15 minutes' walk from the major monuments.
